OAK GROVE SMOKEHOUSE CHICKEN FRY (NEW ORLEANS STYLE - HOT & SPICY)

                         

     For many years, fried chicken outlets in New Orleans have served highly seasoned, hot & spicy fried chicken along with the traditional fried chicken.  Such New Orleans style fried chicken has become very popular and has spread throughout the South.  OAK GROVE SMOKEHOUSE CHICKEN FRY is a specially blended combination of flour and seasonings for preparing hot & spicy New Orleans style fried chicken at home.  Try serving a hot & spicy chicken with rice dressing made from OAK GROVE SMOKEHOUSE CAJUN DIRTY RICE MIX for a meal that might have come straight from New Orleans!  But don't limit OAK GROVE SMOKEHOUSE CHICKEN FRY just to chicken.  It can be used to spicy up a number of other fried foods as the following recipes will show.

                                                   Hot & Spicy Fried Chicken

1 (2-3 lb.) fryer, cut in serving size pieces

1 (6oz.) pkg. OAK GROVE SMOKEHOUSE CHICKEN FRY

Oil fry frying

 

     Wash chicken and pat dry.  Roll or shake chicken pieces in Chicken Fry until well coated.  Fry in hot oil in a skillet or in deep fat heated to 375˚F. for 5-7 minutes on each side.

 

Variation:  For thick and crusty chicken, dip pieces in a batter of egg and evaporated milk before coating with Chicken Fry.  Fry as above

 

     Also use OAK GROVE SMOKEHOUSE CHICKEN FRY to add spicy flavor to:

                                                        Chicken Fried Steak

                                                        Pork chops

                                                        Veal cutlets

                                                        Rabbits, squirrel or other game

     Simply coat pieces well with Chicken Fry and cook as desired.

                                                       Potato Planks

3-4 large potatoes, cut in sticks somewhat larger than French Fries, or an equivalent amount of frozen French Fries

1 (6oz.) pkg. OAK GROVE SMOKEHOUSE CHICKEN FRY

1 cup water or club soda

Oil fry frying

 

     Mix Chicken Fry with water or club soda until smooth.  Dip potato sticks into this batter.  Fry in deep fat heated to 375˚F. for 10-12 minutes or until brown and crispy outside and tender inside.  If using frozen fries, cook according to package directions.  Drain on absorbent paper.

     This recipe was suggested to us by Mrs. H. A. Duvoisin, Jr. of Metairie, LA who discovered it as a way to use up leftover Chicken Fry.  We agreed that it was delicious!
